Sponge Cake

Sponge cake is a well known West Indian Dessert and is frequently made around Christmas time.

It is one of those cakes that people always seem to have problems with however this recipe is quite foolproof.

There are several keys to a good sponge cake which include :

  • The eggs and butter must be room temperature.
  • The butter and sugar mixture must be creamed to a light and fluffy texture.
  • When folding in the dry ingredients, do not over- mix. This results in the cake having a rubbery texture. 
  • Mix in the eggs one at a time, adding in more than one or all in at the same time causes the mixture to curdle.




Further adaptations of this recipe are as follows : 

For a lemon sponge cake- Add 1 tsp of lemon extract along with zest of 1 lemon and 1 cup of lemon juice.
