Carrot Cake

This carrot cake was made for my Dad's birthday. It was one of the best tasting cakes I've ever made. The cinnamon and pineapple really adds another level of taste to the cake. The cake is perfectly complemented by this cream cheese frosting. I made this recipe into a double layer and frosted the cake, where I coloured some of the frosting orange and green and piped it onto the cake in a carrot design. However what I learnt from this experience is to ensure that when the cake is being frosted, the room is not too hot otherwise the icing melts very quickly. It is best done at night when the kitchen is cool or very early in the morning. It is also essential to cool the cake entirely before frosting.
